To turn an email into a task, drag it from anywhere in Gmail to the Tasks sidebar. The email's subject will be kept as the task name and a link will be underneath it. You can archive or move the message and still open it from the link in the Tasks.

The most direct way to use the Tasks is to write down the things you need to do and check them off as you complete them. If you want to plan, you can rearrange your tasks into the order you should complete them. Drag a task to the order you want.
